We recommend getting a size at least a few inches longer than your surfboard. This just makes it easier to work with, and if you ever decide to get a slightly longer board, you won't have to buy a new sock.
Every size is 21" wide un-stretched, and they stretch to over 30".
7' and shorter socks have pointed noses, while 8' and longer socks have rounded noses.
